Marwari Dal

Marwari dal is a famous cuisine of Rajasthan. There are several types of Rajasthani dals. This recipe is a simple chana dal recipe. Isn’t your mouth watering since long? Take a look at how to make this yummy dal recipe.

Ingredients

  • Dried mango powder – 2 tsp
  • Coriander cumin seeds powder – 1 tsp
  • Chilli powder – 1/4tsp
  • Chopped onions – 1/2 cup
  • Chopped garlic – 1 tsp
  • Cumin seed – 1/4tsp
  • Turmeric powder – 1/4 tsp
  • Chana dal – 2 tbsp
  • Salt as per your requirement
  • Green chili paste – 2 tsp

Method To Prepare

No 1 – Soak both the dals for 2-3 hours. Before soaking, wash it well.

No 2 – In a pressure cooker, add both the dals, turmeric powder, 1 cup water and salt as per your requirement.

No 3 – Give it 3 whistles and before opening the cooker’s lid, allow the steam to escape.

No 4 – Until then, heat a non-stick pan for a few seconds, add the cumin seeds and dry roast them for a few seconds. Then add, garlic, onions, green chili paste, chili powder, coriander-cumin seeds powder. Roast it all for a few seconds.

No 5 – In the pan, add cooked dals and 1/2 cup of water. Mix everything well.

No 6 – After a few minutes, add dry mango powder and 1/2 a cup water. Mix all these ingredients and cook them for 3 minutes on a medium flame.

No 7 – Stir it well and check if it is cooked well or not. Then add the coriander leaves to garnish the dal.

Gujarati Dal

The significance of Gujarati dal is its sweet and sour taste. As much as Gujarati’s are known for their friendly and sweet nature, even the food they cook turns out amazingly delicious. You can have this dal with chapati and sabzi or rice. Arhar dal is used for making this delicious dish. Jaggery is added for a little sweetness.

Ingredients

  • Red Chili – 2
  • Curry leaves – 8-10
  • Fenugreek seeds – 1/4tsp
  • Chili powder – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Garam masala powder – 1/2 tsp
  • Salt as per your requirement
  • 2 tbsp jaggery
  • 1/2 tsp coriander powder
  • 3-4 dried kokums
  • 1 small size tomato
  • 1/2 cumin powder
  • 3/4 cup arhar dal

Method to Prepare

No 1 – Wash the Arhar dal two to three times. Soak it in water for about 30 minutes.

No 2 – Transfer this rinsed dal into the pressure cooker.

No 3 – Add 2-2.5 cups water and give it 2 whistles, keep it on low flame for 8-10 minutes and turn off the flame.

No 4 – Make sure that the dal is cooked well. Take a wired whisk and mash the dal well.

No 5 – To this mashed dal, add turmeric powder, red chili powder, coriander powder, cumin powder, jaggery, dried kokums, cut the tomato and add salt as per your requirement.

No 6 – Stir all the dry masalas and salt well. Add around 2 cups water to this mixture so that the dal is not thick. After adding water, check if the salt is tasting right and add a little more salt if required.

No 7 – Allow this dal to boil for a few minutes.

No 8 – While the dal is boiling, you can do the tempering. Take a small pan, add ghee, mustard seeds, cumin seeds, red chilies, curry leaves, fenugreek seeds and asafoetida. Stir it well an put off the flame.

No 9 – Transfer this tempering into the dal and stir it well.

Garam dal is ready!

Sindhi Curry

This curry is an authentic dish of the Sindhi’s and this is a mandatory dish during weddings. This curry is made with besan and many vegetables.

You can add Okra, potato and drum sticks to the kadhi and it tastes mind-blowing. Sindhi’s usually eat this kadhi with fried potato and sweet boondi.

Ingredients

  • Oil – 3 tbsp
  • Asafoetida – 1/4tsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2tsp
  • Fenugreek seeds – 1/2 tsp
  • Curry leaves – 8-10
  • Green chilies – 2-3
  • Gramflour – 4 tbsp
  • Red chili powder – 1 tsp
  • Tomato puree – 1 cup
  • Salt as per requirement
  • Turmeric powder – 1/4tsp
  • The vegetables you wish to add
  • Tamarind pulp – 3-4 tbsp
  • Fresh Coriander

Method to prepare

No 1 – Take a pan, allow it to heat for a few seconds. Add oil, mustard seeds, cumin seeds, asafoetida, curry leaves, green chilies, fenugreek seeds and ginger. Let it cook for a few seconds. Stir it well.

No 2 – Add besan to this curry and stir this mixture well.

No 3 – To this, add red chili powder and some water. Stir this mixture well. Keep stirring until the besan lumps break. Add turmeric powder and salt to this mixture.

No 4 – Add some water and stir this curry well. Add the necessary vegetables and allow the curry to boil until the vegetables get cooked.

No 5 – In the end, add tamarind pulp and stir this curry.
